  • 1/2 large large red onion, very finely diced
  • 400grams adzuki beans, drained and rinsed
  • 1teaspoons wholegrain mustard
  • 1tablespoons white wine vinegar
  • 1-2 drizzle extra virgin olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 handful fresh flat-leaf parsley, finely chopped
  • 350grams skinless ready-cooked chicken, shredded

Method

Step 1 of 2

Mix together the onion (reserve a little to garnish the salad), beans, and mustard in a bowl. Add a splash of vinegar and a drizzle of olive oil, and season with salt and black pepper. Stir through the parsley.

Step 2 of 2

Spoon the bean mixture into a shallow serving bowl, then top with the shredded chicken. Sprinkle over the remaining red onion, and serve with some fresh crusty bread and wild rocket leaves.
