- tomato, sliced (to serve)
- 1 green capsicum, deseeded, thinly sliced
- 1 red capsicum, deseeded, thinly sliced
- 1 large brown onion, chopped
- lettuce, shredded (to serve)
- 1/2teaspoons cayenne pepper (optional)
- 1teaspoons ground cumin
- 1teaspoons smoky paprika
- 1tablespoons olive oil
- cheese, grated (to serve)
- 5 leftover cooked BBQ lamb chops
- soft tortilla bread (to serve)
Method
Step 1 of 2
Remove meat from chops. Cut into thin strips about 2cm long. Heat olive oil in a heavy-based frying pan over medium heat. Add spices and meat and stir for 2 minutes. Add cup water, a pinch of salt and mix well. Cook, stirring often, for about 5 minutes or until meat is heated through. Remove from the pan and set aside on a plate.
Step 2 of 2
Add onion and capsicum to the same pan and cook for 7 minutes or until slightly browned. Return the meat to the pan and cook, stirring occasionally, for a further 3 minutes. Serve immediately with soft tortilla bread, grated cheese, sliced tomato and shredded lettuce.
