- 250grams strawberries, hulled
- 600milliliter double cream (plus extra to serve)
- 400grams chocolate frosting
- 1 cup coconut flakes

Description
For a clever cake hack, use pre-made madeira cake and store-bought chocolate frosting to make an impressive lamington cake.
Method
Step 1 of 2
Halve cake horizontally. Place bottom of cake, cut-side up, on a platter. Place strawberries in a single layer on cake. Spoon over cream to cover strawberries completely, ensuring to fill in any gaps. Place remaining cake half, cut-side down, on top and press down slightly to secure.
Step 2 of 2
Using a butter knife, spread frosting over cake. Sprinkle over coconut flakes to cover top and side of cake, then serve.
