For the buttercream
  • 100grams butter, softened
  • 200grams icing sugar
  • 1/2-1teaspoons green food colouring
  • 1 ready-made coloured royal icing (to decorate)
  • 100grams butter, softened
  • 150grams caster sugar
  • 3 eggs, lightly beaten
  • 1teaspoons vanilla extract
  • 200grams self-raising flour
  • 1teaspoons baking powder
  • 3 1/2tablespoons milk

Description

Make these pretty cupcakes for a spring birthday party treat.

Method

Step 1 of 5

Preheat the oven to 180°C (Gas 4). Place the butter and sugar in a bowl and use an electric hand-held whisk to beat them until light and fluffy. Whisk in the eggs and vanilla extract.

Sift together the flour and baking powder. Whisk the flour mixture and the milk into the batter alternately. Place 12 cupcake cases in a deep 12-hole muffin tin (this will help them keep their shape).

Step 3 of 5

Spoon the cake batter into the cases, filling each two-thirds full. Bake for 16-18 minutes until springy to the touch. Transfer to a wire rack to cool.

To make the buttercream, beat the butter, icing sugar, and food colouring until smooth and creamy.

Step 5 of 5

When the cakes are cold, cover them in buttercream, using the back of a spoon dipped in warm water to smooth the surface. Decorate with ready-made sugar flowers, or cut your own using ready-made coloured royal icing.
