  • 3/4 cup caster sugar
  • 1 egg
  • 1/2 cup cocoa powder
  • 12 lindt lindor milk chocolates
  • 1/4 cup vegetable oil
  • 1 cup milk

Description

One for lovers of chocolate with added chocolate inside, cut while still warm the chocolate oozes out.

Method

Step 1 of 10

Preheat oven to 200 degrees celsius.

Step 2 of 10

Line a 6 hole muffin tin with muffin cases.

Step 3 of 10

Sift the self raising flour and cocoa powder into a large bowl.

Step 4 of 10

Add the sugar and stir together.

Step 5 of 10

Create a well in the centre of the dry mixture.

Step 6 of 10

In a separate bowl, whisk together the egg, oil and milk.

Step 7 of 10

Pour the liquid into the well and very gently fold the mixture together, the batter should be slightly lumpy - do not over-mix.

Step 8 of 10

Place a spoon full of the mixture into each muffin case then place a chocolate Lindt in the middle, another spoon full of mixture then place another chocolate Lindt into the mixture. Fill the muffins cases till 2/3 to the top.

Step 9 of 10

Bake for 20 minutes.

I served them straight from the oven - nice and hot to allow the chocolate to ooze out,
