  • 120grams butter (1/2 cup)
  • 2tablespoons golden syrup
  • 395grams sweetened condensed milk (395g)

Method

Step 1 of 5

Melt the margarine. Add the sugar and syrup and stir over low heat until most of sugar has dissolved.

Step 2 of 5

Let it simmer/slow boil as you stir until it turns a brown caramel colour and becomes quite thick.

Step 3 of 5

Line a 20cm cake tin (or similar small dish) with baking paper. Have a spatula ready to scrape the pot as soon as the caramel is ready.

Pour in the condensed milk, stirring constantly. Ensure you stir right around the base of the pot and through the centre so that the caramel doesn't 'catch' and burn. If it does burn, reduce the heat further. Don't stop to deal with any little brown flecks - just keep stirring!

Pour the caramel into the prepared tin and allow to cool before slicing. My hubby is such a fan of this recipe, I make it as a birthday cake each year!
