  • 500grams lean chicken mince
  • 1 free range egg
  • 1 clove garlic, crushed
  • 1 cup baby spinach leaves
  • 50grams mozzarella, cut into 3 x 1.5cm rectangles
  • 1/3 cup sesame seeds
  • 5milliliter extra virgin olive oil cooking spray
  • 60grams leafy mix, to serve

Description

Impress little ones with this delicious chicken rissole recipe that's on the table in 20 minutes and packed with flavour. Plus, they're a nutritionally approved meal that the kids will love.

Method

Step 1 of 4

Combine mince, egg, garlic and spinach in a large bowl.

Step 2 of 4

Shape mixture into 8 balls. Press a piece of cheese into the centre of each ball, then shape mince to enclose cheese completely.

Step 3 of 4

Place sesame seeds on a plate. Roll balls in seeds to lightly coat, then flatten slightly. Transfer to a plate. Chill for 10 minutes.

Step 4 of 4

Spray balls with oil. Heat a large non-stick frying pan over medium heat. Cook balls, in batches, for 4 minutes each side or until golden brown and cooked. Serve with salad leaves.
