  • 1 qty cooked Veg-packed ‘fried rice’
  • 1 free range egg, lightly beaten
  • 1/4 cup plain flour
  • 5milliliter extra virgin olive oil cooking spray
  • 1/4 cup plain Greek-style yoghurt
  • 1/2 bunch chives, finely chopped

Description

Make a double batch of 'fried' rice and turn it into these crispy, crunchy handheld fritters, well-suited to lunch boxes and afternoon tea.

Method

Step 1 of 3

Preheat oven to 210°C/200°C fan-forced. Line 2 large baking trays with baking paper. Place rice mixture in a large bowl. Add egg and flour. Stir until well combined.

Using 1/4 cup of the mixture at a time, spoon mixture 10cm apart onto baking trays. Using damp hands, gently press mixture to form 8cm-wide fritters. Repeat with remaining mixture to make 10 fritters in total. Lightly spray with oil.

Step 3 of 3

Bake for 10 minutes or until golden. Stand on trays for 2 minutes to cool slightly. To serve, dollop with yoghurt and sprinkle with chives.
