  • 7 free range eggs, lightly whisked
  • 1 1/2 cups cooked long-grain white rice
  • 420grams canned no-added-salt corn kernels, drained
  • 60grams spinach, shredded
  • 1 cup shredded tasty cheese
  • 1 cup Mix-a-Mato® mini tomatoes, halved

Description

Go-go-stop for a slice of this one-pan dinner, packed with corn, tomatoes, spinach and tasty cheese. Plus, they're a nutritionally approved meal that the kids will love.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease and line a 30 x 20cm (base measurement) slice pan with baking paper, allowing paper to overhang. Whisk eggs, rice, corn, spinach and cheese in a bowl. Season.

Step 2 of 3

Pour mixture into prepared pan. Smooth surface. Arrange tomatoes, cut-side up, on top of mixture.

Step 3 of 3

Bake for 40 minutes or until just set at centre and golden brown. Remove from oven. Stand in pan for 10 minutes. Transfer to a chopping board, then cut into 12 pieces. Serve.
