- 5milliliter olive oil cooking spray
- 1 brown onion, coarsely grated
- 2 carrots, coarsely grated
- 500grams extra lean beef mince
- 1 1/2 cups cooked quinoa, cooled
- 2 cloves garlic, crushed
- 1/2 bunch continental parsley, leaves picked, finely chopped
- 1 free range egg, lightly beaten
- 400grams tomato passata
- 1/2 cup Woolworths Italian cheese blend
- 2teaspoons dried Italian herbs
Description
These savoury Italian-inspired muffins are as satisfying as they are delicious. Lean beef mince, herbs, cheese and quinoa combine for a snack in a snap.

Tip:Store in an airtight container in the refrigerator for up to 4 days, or individually wrap muffins and freeze for up to 3 months.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Spray a 12-hole, 1/3-cup capacity muffin pan with oil. Place onion and carrot in a clean tea towel and squeeze out excess moisture. Transfer to a large bowl.

Add beef, quinoa, garlic, parsley, egg and 1 cup passata to bowl and mix well to combine. Season with pepper. Divide beef mixture among pan holes. Top evenly with remaining passata. Sprinkle with cheese and dried herbs.
Step 3 of 3
Bake for 25 minutes or until cheese is golden and beef is cooked through. Stand in pan for 10 minutes to allow muffins to firm up slightly, then serve.
