  • 1 tomato, finely chopped
  • 1/2 small red onion, finely chopped
  • 1 small red capsicum, deseeded, finely chopped
  • 1teaspoons ground cumin
  • 1/4 cup Woolworths smokey chipotle cheddar & tasty cheese shredded blend
  • 1teaspoons smoked paprika
  • 16 sheets gow gee pastry
  • 5milliliter olive oil cooking spray
  • 1/2 cup Greek-style yoghurt
  • 1 lime, zested, cut into wedges

Description

Wonton wrappers get a Mexican-inspired makeover with this yummy quesadilla recipe that the whole family will love.

Method

Step 1 of 4

Place beans in a medium bowl. Using back of a fork, coarsely crush beans. Stir in tomato, onion, capsicum, cumin, cheese and half of the paprika. Season with pepper.

Step 2 of 4

Place 1 tbs bean mixture on 1 side of each pastry sheet. Fold pastry over bean mixture to form a semicircle.

Step 3 of 4

Lightly spray a large non-stick frying pan with oil and heat over medium-low heat. Cook quesadillas, in 2 batches, for 2 minutes on each side, or until golden brown and filling has warmed through.

Step 4 of 4

Combine yoghurt, zest and remaining paprika in a small bowl. Serve quesadillas with yoghurt mixture and lime wedges.
