- 800grams washed white potatoes
- 500grams smooth ricotta
- 1 bunch chives
- 1 small red capsicum, halved, deseeded, thinly sliced
- 1 Lebanese cucumber, finely chopped
- 60grams Woolworths baby rocket leaves
Description
Fluffy herbed ricotta-stuffed jacket potatoes topped with crunchy capsicum and cucumber. Make these in three steps for an easy dinner.
Method
Step 1 of 3
Preheat oven to 240°C/220°C fan-forced. Pierce potatoes all over with a fork, then wrap each in foil. Place on top oven rack and bake
for 50 minutes or until tender. Allow to cool for 10 minutes.
Step 2 of 3
Meanwhile, combine ricotta and chives in a medium bowl. Season with pepper.
Step 3 of 3
Carefully remove potatoes from foil and place on serving plates. Cut potatoes down middle, ensuring not to cut all the way through. Gently pull apart potatoes to create an opening. Fill cavities with ricotta mixture, then top with capsicum
and cucumber. Divide rocket among plates and serve.
