- 200grams fresh pizza dough ball
- 1 small red onion, coarsely grated
- 1 small carrot, coarsely grated
- 1 small zucchini, coarsely grated
- 1teaspoons ground cumin
- 1teaspoons smoked paprika
- 200grams Woolworths Heart Smart extra lean beef mince
- 120grams baby spinach leaves
- 200grams Solanato tomatoes, halved
- 3/4 cup light Greek yoghurt
Description
These nutritionally approved beef and veggie pide are designed with kids in mind and are perfect for lunch or dinner.
Method
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Divide dough in half. Using hands, stretch each dough portion to form 20cm ovals.
Step 2 of 4
Combine onion, carrot, zucchini, cumin and paprika in a medium bowl.
Step 3 of 4
Spoon vegetable mix over centres of dough, leaving a 2cm border. Crumble mince over vegetable mixture. Fold dough edges towards filling to create a border.
Step 4 of 4
Bake for 20 minutes or until mince is cooked through and dough is golden and crisp. Cut pides in half. Top with spinach, tomato and yoghurt. Season with pepper and serve.
