  • 1/2 cup iceberg lettuce, finely shredded

Description

With a little homemade flair, this sandwich recipe with succulent chicken tenderloins, Greek-style yoghurt and lettuce will keep fussy eaters happy.

Method

Step 1 of 3

Bring a small saucepan of water to the boil over high heat. Reduce heat to medium. Add chicken and simmer, uncovered, for 6 minutes or until chicken is cooked through. Remove chicken from pan and transfer to a board. Using 2 forks, finely shred chicken.

Step 2 of 3

Combine chicken and yoghurt in a small bowl. Season with pepper.

Step 3 of 3

Using a 9cm round cutter, cut 8 rounds from bread slices. Place lettuce in centre of 4 rounds. Top with chicken mixture. Using your fingers, flatten remaining rounds slightly, then place over chicken mixture. Seal edges with a fork. Serve.
