Description

Layer caramelised tortillas with sweet berries and creamy ricotta for a healthier weekend dessert option.

Method

Step 1 of 3

Reserve 1/4 cup ricotta. Combine remaining ricotta with honey, cinnamon and vanilla in a bowl.

Step 2 of 3

Heat a medium non-stick frying pan over medium heat. Lightly brush both sides of 1 tortilla with a little ricotta mixture, then cook for 2 minutes on each side or until golden and caramelised. Repeat with remaining tortillas and a little ricotta mixture.

Step 3 of 3

Layer tortillas with remaining ricotta mixture and three-quarters of the berries on a platter. Top stack with reserved ricotta and remaining berries, then serve.
