Method

Step 1 of 2

Bring a saucepan of water to the boil over high heat. Add peas. Cook for 1 minute or until bright green. Strain.

Step 2 of 2

Transfer peas to a bowl and mash with a fork. Add ricotta, mashing well to combine. Season with black pepper. To serve, spread pea mixture on toast and top with egg.
