- 8 medjool dates
- 1/2 cup frozen strawberries
- 8 strawberries, sliced
- 1/2teaspoons vanilla bean paste
- 2teaspoons lime juice
- 1/4 cup oat milk
- 1/2 cup Greek-style yoghurt
- 1/4 cup apple berry bircher muesli
- 1/2 cup frozen fresh mango

Method
Step 1 of 5
Place strawberries, mango, vanilla bean paste, yoghurt and lime juice into a blender. Blend until smooth, adding a tablespoon of water at a time to loosen mixture if required.

Line a loaf tin with baking paper, and pour yoghurt mixture into tin. Freeze for one hour.

In the meantime, add dates, oat milk and vanilla bean paste to the clean blender. Blend until smooth. Add a tablespoon of water at a time to loosen mixture if required.
Step 4 of 5
Once frozen, remove yoghurt mixture from freezer and place 11/2 scoops into each bowl.
Step 5 of 5
For each bowl, sprinkle 1 tbsp muesli over the frozen yoghurt, and drizzle 1 tbsp of the date caramel on top. Divide strawberries evenly among bowls.
