  • 1teaspoons vanilla extract

  • 4 small plums, halved, destoned, thinly sliced into wedges

Description

When the kids are craving something sweet, whip us these cafe-worthy filo plum tarts. They're nutritionally approved and are on the table in 30 minutes.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line 2 baking trays with baking paper. Place 1 pastry sheet on workbench. Spray with oil. Top with a second sheet.

Step 2 of 4

Fold in half crossways. Fold over 4 edges to create a pastry shell. Repeat with remaining pastry and oil to make 4 pastry shells.

Step 3 of 4

Combine ricotta, honey, vanilla and cinnamon in a medium bowl. Divide ricotta mixture evenly among centre of pastry shells.

Step 4 of 4

Arrange plum, slightly overlapping, over ricotta. Bake for 15 minutes or until pastry is golden and crisp. Serve.
