  • 1tablespoons extra virgin olive oil
  • 1 1/2tablespoons plain flour
  • 1 cup milk
  • 1 cup Woolworths Italian cheese blend
  • 4 sheets fresh lasagne
  • 150grams shredded cooked chicken
  • 80grams broccoli, cut into florets
  • 1/3 bunch continental parsley, leaves picked, finely chopped

Description

The kids will love this Italian-inspired lasagne hack – pasta sheets are filled with chicken, cheese, broccoli and white sauce, then baked till golden.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line base of a 20 x 26cm baking dish with baking paper. Heat oil in a medium saucepan over medium heat. Add flour and cook for 1 minute, stirring constantly, or until mixture starts to bubble. Gradually whisk in milk. Bring to the boil, then boil for 1 minute or until mixture thickens. Remove pan from heat. Stir in half of the cheese. Season with pepper.

Step 2 of 4

Meanwhile, cook pasta in a large saucepan of boiling water for 5 minutes or until tender. Drain. Place sheets, in a single layer, on a clean a work bench. Cut each sheet in half lengthways.

Step 3 of 4

Top each pasta sheet with 1½ tbs white sauce, then top evenly with chicken, broccoli and three-quarters of the parsley. Scatter each sheet with 2 tsp remaining cheese. Roll up sheets to enclose filling.

Step 4 of 4

Arrange roll-ups in dish. Top with remaining white sauce and remaining cheese. Bake for 20 minutes or until cheese is golden and filling is hot. Serve scattered with remaining parsley.
