  • 2tablespoons extra virgin olive oil
  • 1 large brown onion, coarsely grated
  • 3 medium carrots, coarsely grated
  • 1/3 cup plain flour
  • 3 cups Woolworths milk
  • 1 cup Woolworths Italian cheese blend
  • 3 cups cooked macaroni
  • 1 bunch chives, finely chopped

Description

Make snack time fun and also healthier with this nutritionally approved recipe. Carrot filled mac and cheese bites will be the new go-to savoury treat.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 12-hole, 1/3-cup capacity muffin pan.

Step 2 of 3

Heat oil in a large saucepan over medium heat. Cook onion and carrot for 10 minutes, stirring, or until softened. Sprinkle over flour, then stir for 1 minute or until combined. Gradually add milk, stirring to combine. Bring to a simmer, then cook for 10 minutes or until mixture has thickened. Remove pan from heat. Fold in cheese, macaroni and three-quarters of the chives until cheese has melted. Spoon mixture into muffin pan. Sprinkle with half of the remaining chives.

Step 3 of 3

Bake for 25 minutes or until golden brown. Cool in pan for 10 minutes. Serve topped with remaining chives.
