  • 1/2 cup milk
  • 1 cup light tasty shredded cheese
  • 60grams baby spinach leaves (to serve)
  • 1/4 cup continental parsley leaves, chopped

Method

Step 1 of 3

Bring a medium saucepan of water to the boil over high heat. Add pumpkin and cook for 10 minutes or until very soft. Drain.

Meanwhile, cook macaroni according to packet instructions.

Place pumpkin, milk and cheese in a food processor. Blend for 30 seconds or until smooth and combined. Season with pepper. Transfer to a large bowl. Add macaroni and stir to combine. Serve mac and cheese topped with spinach and parsley.
