  • 1/2 cup frozen peas
  • 300grams washed red potatoes (quartered)
  • 2tablespoons continental parsley leaves
  • 1tablespoons extra virgin olive oil
  • 2 slices wholemeal bread (roughly torn)
  • 2 tuna in springwater (drained)
  • 1 free range egg yolk
  • 1/2 cup light tasty shredded cheese

Method

Step 1 of 5

Place potato in a large saucepan, cover with cold water and bring to the boil over high heat. Reduce heat to medium, then simmer for 20 minutes or until tender. Drain, return to pan and mash until smooth. Set aside for 5 minutes, then refrigerate until cool enough to handle.

Meanwhile, fill food flasks with boiling water and set aside.

Transfer mashed potato to a large bowl. Add remaining ingredients, except oil, and mix well to combine. Using damp hands, divide and shape mixture into 6 patties, ensuring size of patties is sightly smaller than mouth of the flasks.

Heat oil in large frying pan over medium heat. Cook patties for 4 minutes on each side or until golden brown.

Step 5 of 5

Drain water from flasks and dry well. Place patties inside and serve.
