- 4 wholemeal bread rolls
- 460grams skinless barramundi fillets, divided into 4 portions
- 4 slices fresh pineapple
- 4tablespoons parsley
- 1 tomato, sliced
- 1 cup lettuce, shredded
- 1 lemon, juice only
- 1/4 cup hummus
- 1tablespoons olive oil
- 250grams rainbow coleslaw
- 250grams whole cooked beetroot, sliced
Method
Step 1 of 2
Sprinkle half of the parsley over the barramundi fillets and season with pepper. Heat oil in a large frying pan over medium heat. Fry barramundi fillets for 2 minutes, turn and cook for a further 1 minute or until just cooked through. Drizzle with lemon juice and sprinkle over remaining parsley.

Halve each roll and spread both sides with hummus. Place lettuce, beetroot, tomato, pineapple and barramundi on one half of each roll. Top with remaining roll halves. Serve burgers with rainbow coleslaw on the side.
