- 125grams green beans, trimmed, cut into 3cm lengths
- 1/2 red capsicum, seeded, diced
- 4-5 fresh strawberries (for snack)
- 210grams chickpeas with no added salt (rinsed, drained)
- 30grams feta cheese, crumbled
- 150grams natural yoghurt (for snack)
- 2teaspoons olive oil
- 2teaspoons lemon juice
- 2teaspoons sultanas (for snack)
- 100grams lean chicken breast, cooked, diced
Method
Step 1 of 4
Lunch: Place beans in a steamer over a pan of simmering water. Cover and steam for 2-3 minutes or until just tender. Refresh under cold running water. Drain.
Step 2 of 4
Combine beans, capsicum, chickpeas, chicken and feta in a large bowl. Whisk the lemon juice and olive oil together. Add to salad and gently toss to combine. Cover and refrigerate until required.
Step 3 of 4
Snack 1: Yoghurt topped with sultanas.
Step 4 of 4
Snack 2: Fruit.
