  • 125grams green beans, trimmed, cut into 3cm lengths
  • 1/2 red capsicum, seeded, diced
  • 4-5 fresh strawberries (for snack)
  • 210grams chickpeas with no added salt (rinsed, drained)
  • 30grams feta cheese, crumbled
  • 150grams natural yoghurt (for snack)
  • 2teaspoons olive oil
  • 2teaspoons lemon juice
  • 2teaspoons sultanas (for snack)
  • 100grams lean chicken breast, cooked, diced

Method

Step 1 of 4

Lunch: Place beans in a steamer over a pan of simmering water. Cover and steam for 2-3 minutes or until just tender. Refresh under cold running water. Drain.

Step 2 of 4

Combine beans, capsicum, chickpeas, chicken and feta in a large bowl. Whisk the lemon juice and olive oil together. Add to salad and gently toss to combine. Cover and refrigerate until required.

Snack 1: Yoghurt topped with sultanas.

Step 4 of 4

Snack 2: Fruit.
