  • 1teaspoons rice malt syrup
  • 1/2 cup parmesan, grated (for snacks)
  • 1/2 cup puffed rice

  • 6 strawberries, halved
  • 1/2 tomato, diced
  • 1/2 medium carrot, grated
  • 1/2 Lebanese cucumber, sliced
  • 1/2 cup lettuce, shredded
  • 1 free range egg, hard-boiled and sliced
  • 1/2 cup pearl couscous, cooked

Method

Step 1 of 3

Combine couscous with carrot, cucumber, lettuce and tomato in an airtight container. Top with egg.

Snack 1: To make cheesy trail mix, preheat oven to 180ºC/160ºC fan-forced. Line 2 baking trays with baking paper. Combine grain and malt syrup in bowl, then place on 1 tray. Bake for 10 minutes or until golden and crisp. Remove from oven. Increase oven to 200ºC/180ºC fan-forced. Spread parmesan on remaining tray and bake for 10 minutes or until golden and crisp. When cool enough to handle, break up both grain mixture and parmesan and combine in an airtight container.
