Salmon Mini Rolls, Pear And Cheese And Crackers
8 Ingredients
- 1/2 small Lebanese cucumber, cut into batons
- 1 small pear, cut into wedges (for snack)
- 2 sheet nori
- 20grams cheese, sliced (for snack)
- 2teaspoons sushi seasoning
- 6 seaweed rice crackers, for snack
- 95grams can salmon in springwater, drained, flaked
- 1/2 cup brown rice

Cut a quarter from the top of each nori sheet and discard. Place one sheet of nori, shiny side down, on a bamboo mat. Dip your hands into a bowl of cold water then spread half the rice evenly over the bottom 2/3 of sheet, leaving a small border around edge. Place half the salmon along middle of rice. Top with some cucumber. Lift the end of the mat closest to you, roll it over the ingredients to enclose and continue to make a complete roll. Repeat with remaining ingredients to make another roll. Cover in plastic wrap and refrigerate until ready to pack in lunch box. Cut 1 roll into 6 slices and pack into lunch box. Snack 1: Pack pear in lunch box. Snack 2: Serve crackers with cheese.
