  • 1/4 red capsicum, cut into sticks (for capsicum & cucumber sticks)
  • 1/4 continental cucumber, cut into sticks (for capsicum & cucumber sticks)
  • 1 zucchini, finely grated (for tuna patties)
  • 185grams can tuna chunks In springwater, drained, flaked (for tuna patties)
  • 1 cup fresh pineapple, diced
  • 2teaspoons extra virgin olive oil (for tuna patties)
  • 40grams cheese block, sliced (for cheese muffin)
  • 2 slice wholemeal soft sandwich bread, made into breadcrumbs (for tuna patties)
  • 1 free range egg (for tuna patties)

Method

Step 1 of 3

Tuna Patties: Combine the zucchini, tuna, egg and breadcrumbs in a bowl. Season to taste. Shape mixture into 6 patties.

Step 2 of 3

Heat the oil in a large non-stick frying pan over medium heat. Cook patties for 2 minutes each side or until golden brown. Set aside to cool completely. Store in an airtight container in fridge until required.

Step 3 of 3

Pack capsicum & cucumber sticks in an airtight container. Serve with tuna patties. Snack 1: Pack pineapple in an airtight container Snack 2: Top muffin with cheese. Grill until cheese is melted. Cool and cut in half.
