- 2teaspoons extra virgin olive oil
- 1 brown onion, finely chopped
- 1/2 small head broccoli, finely chopped
- 1 cup milk
- 60grams baby spinach leaves
- 1 1/2 cups cooked macaroni
- 1/3 cup Woolworths Italian cheese blend
- 1teaspoons mustard powder
- 2 sprigs continental parsley, leaves picked, roughlychopped
Description
Everybody's favourite comfort food has had a fresh update. The kids will love this version of mac 'n' cheese – even if it is green.
Method
Step 1 of 3
Heat oil in a medium saucepan over medium heat. Add onion and cook for 5 minutes, stirring, or until softened. Add broccoli and milk, then bring to a simmer. Simmer, covered, for 12 minutes or until milk has reduced by half.
Step 2 of 3
Add spinach and cook for 1 minute, stirring, or until wilted. Using a stick blender, blend milk mixture until smooth and combined. Add pasta, cheese and mustard powder, then stir to combine.
Step 3 of 3
Meanwhile, preheat flasks, if using, by filling with boiling water and standing for 5 minutes. Drain. Spoon pasta into flasks. Sprinkle with parsley. Serve.
