- 1/2 bunch continental parsley, leaves picked, finely chopped
- 1 cup cooked Veg-packed 'fried rice'ingredient tip
- 1tablespoons plain flour
- 3 free range eggs, lightly beaten
- 1/2 cup shredded tasty cheese
Description
Turn your 'fried' rice leftovers into this cheesy next-day slice that's great for breakfast, morning tea or lunch.
Method
Step 1 of 2
Preheat oven to 200°C/180°C fan-forced. Grease a 16 x 26cm (base measurement) slice pan and line with baking paper, allowing paper to extend 2cm above the edge of the pan on all sides.
Step 2 of 2
Finely chop parsley. Place rice mixture, flour, egg, cheese and chopped parsley in a bowl. Stir until well combined. Spread mixture into pan and smooth the top. Bake for 30 minutes or until golden and set. Set aside for 15 minutes to cool before transferring to a chopping board and cutting into 12 pieces. Serve sprinkled with remaining parsley.
