- 1/3 cup plain flour
- 3/4 cup skim milk
- 4 free range eggs
- 1 zucchini, finely grated, squeezed
- 1 green capsicum, finely chopped
- 2 spring onions, thinly sliced
- 2/3 cup low-fat shredded tasty cheese
- 60grams spinach leaf mix
Description
Whip up these nutritionally approved vegetable frittatas in a pie-maker for the kids to enjoy as a snack. They're easy to make and loaded with flavour.
Method
Step 1 of 3
Preheat a 4-hole (1/3- cup capacity) pie-maker until the indicator light illuminates green.
Step 2 of 3
Meanwhile, place flour in a large jug. Add milk and eggs. Whisk until smooth and combined. Combine zucchini, capsicum and onion in a bowl.
Step 3 of 3
To make 4 frittatas at a time, pour egg mixture equally among preheated holes, about 2/3 of the way up. Add 1 heaped tbs of zucchini mixture, then sprinkle each with 1 tbs of cheese. Close lid. Cook for 6-8 minutes or until golden brown and set. Using a non-stick spatula, transfer frittatas to a wire rack. Repeat with remaining egg mixutre, zucchini mixture and cheese to make 8 frittatas in total. Serve with spinach leaves.
