  • 1 cup pure icing sugar
  • 2tablespoons rum
  • 1/2teaspoons ground cinnamon
  • 2tablespoons maple syrup
  • 1 cup cocoa powder
  • 190grams walnuts
  • 395grams condensed milk

Method

Step 1 of 3

Blitz together ginger nut biscuits, walnuts, icing sugar, cocoa, cinnamon and a pinch of salt in a food processor until a fine crumb is formed.

Step 2 of 3

Add condensed milk, rum (if using) and maple syrup and pulse to combine to a soft but firm mixture. Transfer to a bowl, cover and refrigerate for one hour or until firm.

Step 3 of 3

Use clean hands to roll tablespoons of mixture into balls and roll in chopped walnuts to coat. Store in an airtight container in the fridge.
