- 4 cup desiccated coconut
- 2tablespoons rum
- 200grams dark chocolate
- 150grams glacé cherries
- 395grams condensed milk

Method
Step 1 of 5
Line a baking tray with baking paper.
Step 2 of 5
Combine cherries, coconut, condensed milk and rum (if using) in a medium bowl and mix to combine. Cover and refrigerate for 20 minutes or until firm.
Step 3 of 5
Use clean hands to roll tablespoons of mixture into balls and place on prepared tray. Place in freezer for five minutes.
Step 4 of 5
Melt chocolate in microwave in 20 second intervals or until smooth. Remove balls from freezer and, using two forks, coat in melted chocolate, returning to lined tray. Before the chocolate sets, garnish with reserved cherry pieces and extra coconut.
Step 5 of 5
Return tray to fridge for 10 minutes or until chocolate sets. Store in an airtight container in the fridge.
