- 1/2 cup icing sugar mixture
- 2tablespoons dried cranberries, chopped
- 2tablespoons pistachio kernels, chopped
- 1/4 cup shredded coconut
- 2tablespoons coconut milk powder
- 2 cups Rice Bubbles
Description
These whimsical white Christmas crackles are sure to bring back memories of childhood treats. These bite-sized sweets will make a great gift for loved ones.
Method
Step 1 of 2
Heat copha in a small saucepan over medium heat for 5 minutes or until melted. Combine remaining ingredients in a bowl. Add copha and stir well to combine.
Step 2 of 2
Divide mixture among 12 holes of a 25ml-capacity silicone mini muffin pan, and lightly press to compact. Refrigerate for 20 minutes or until set.
