  • 250grams milk chocolate biscuits
  • 2 cup fine desiccated coconut (save 0.5 cup for coating)
  • 1 cup cocoa powder (save 1/2 cup for coating)
  • 100grams chocolate sprinkles (for coating)
  • 2tablespoons dark rum
  • 1 cup sweetened condensed milk

Method

Step 1 of 4

Place biscuits in a food processor and process to make fine crumbs (or crush well in a large zip lock bag with a rolling pin). Transfer crumbs to a mixing bowl. Using a wooden spoon, stir in condensed milk, coconut, cocoa and rum and mix until well combined.

Step 2 of 4

Refrigerate for 1 hour or until cold and firm.

Step 3 of 4

Using damp hands, roll level tablespoons of mixture into balls.

Step 4 of 4

Toss rum balls in your choice of extra coconut, extra cocoa or chocolate sprinkles. Refrigerate in an airtight container for up to 1 week.
