  • 395grams sweetened condensed milk
  • 125grams white vegetable shortening, chopped
  • 200grams white chocolate cooking melts
  • 3 cups puffed rice cereal
  • 2 cups desiccated coconut
  • 1/2 cup pistachio kernels
  • 1 cup diced cranberries

Description

No Christmas celebration is complete without this traditional creamy, crunchy, fruity white chocolate slice. It's easy to make and will delight kids and adults alike.

Method

Step 1 of 5

Grease a 20x30cm lamington pan. Line with baking paper, extending the paper 2cm over the sides of pan on all sides.

Step 2 of 5

In a small saucepan, combine condensed milk, shortening and half of the chocolate. Stir over low heat until melted and smooth.

Step 3 of 5

In a large bowl, combine cereal, coconut, pistachios and 3/4 cup cranberries. Add melted chocolate mixture and mix well. Spoon mixture into the prepared pan. Press and spread evenly over the base. Refrigerate for 30 minutes.

Step 4 of 5

Place remaining chocolate in a small heatproof bowl. Microwave in 30-second bursts, stirring between each, until melted and smooth. Drizzle melted chocolate over slice. Sprinkle with remaining cranberries. Refrigerate for 30 minutes or until set.

Step 5 of 5

Cut into small bars. Store in an airtight container in the fridge for up to 1 week.
