  • 80grams medjool dates, pitted
  • 1/4 cup desiccated coconut
  • 20 cherries, pitted
  • 1tablespoons honey
  • 1tablespoons pure cream
  • 1/2 cup cocoa
  • 1tablespoons coconut oil
  • 50grams white chocolate, melted
  • 2teaspoons brandy (optional)

Method

Step 1 of 4

To make the ganache, mix 50g melted white chocolate, 1 tbs pure cream and 2 tsp brandy (optional) to combine in a bowl and place in a small snap-lock bag. Chill for 15 minutes or until firm, but not completely set.

Step 2 of 4

Process dates, cocoa, honey and oil in a food processor until smooth. Transfer to a bowl and stir in coconut.

Step 3 of 4

Snip one corner of snap-lock bag and fill cherry centres with ganache. Place on a tray lined with baking paper. Chill for 20 minutes.

Step 4 of 4

Shape 1 tbs date mixture into a ball around each cherry. Chill until firm. Coat with extra cocoa to serve.
