  • 1 cup desiccated coconut
  • 100grams dark chocolate, melted (to decorate)
  • 220grams white chocolate melts
  • 2 cup cake crumbs
  • 3 pretzel sticks (to decorate)
  • 1/2 cup slivered almonds, finely chopped
  • 50grams rainbow sour straps (to decorate)
  • 1/4 cup sweetened condensed milk

Method

Step 1 of 3

Place 200g white chocolate melts and the condensed milk in a heatproof bowl. Sit bowl over a saucepan of simmering water, taking care that the base does not touch the water. Stir occasionally until melted and smooth. Remove from heat. Stir through cake crumbs and almond. Chill for 1 hour or until firm.

Step 2 of 3

Line a baking tray with baking paper. Place coconut in a bowl. Using clean hands, roll 2 tbs cake crumb mixture into a ball, then coat with coconut. Place on prepared tray. Roll 1 tbs mixture into a smaller ball, coat with coconut and place on tray. Repeat with remaining mixture to make six balls of each size.

Step 3 of 3

Melt remaining white chocolate. Use to join large and small truffles, forming heads and bodies. Drop melted dark chocolate onto heads for eyes. Cut strawberry strap into strips for scarves. Break pretzels into pieces for your snowmen’s arms and nose. Note: For our adult version pictured, we piped melted dark chocolate for arms, and used fondant for the noses and hat.
