  • 150grams dark chocolate, broken to small pieces
For the dry ingredients
  • 220grams flour, allow extra for rolling
  • 1/2teaspoons bicarbonate soda
  • 1/2teaspoons salt
  • 1tablespoons ginger, powdered
  • 1teaspoons cinnamon, powdered
  • 1 medium egg
  • 70grams butter, unsalted
  • 100grams maple syrup

Description

The dark chocolate adds a welcome bitter flavour to these gingerbread cookies.

Method

Step 1 of 6

In a bowl, combine all the dry ingredients together and set to one side. In a mixing bowl add the butter and maple syrup and mix until combined fully for 2 minutes.

Step 2 of 6

Now crack in the egg and mix for another 2 minutes. Incremently introduce the dry ingredients into the mixing bowl and mix until it reaches a doughy consistency.

Add the broken chocolate and combine fully. Wrap the mixture in cling film and allow to set in the firdge overnight.

Step 4 of 6

Pre-heat the oven to 180°C/160°C fan-forced and prepare baking trays with some baking paper.

Roll out the dough flat and using cookie cutters, cut and place onto the baking tray leaving space between each.

Step 6 of 6

Bake the cookies for 10 minutes but check regularly as thicker cookies may need an extra 2 minutes. When the cookies are cooked, allow to cool.
