  • 1/2 cup golden syrup
  • 1 egg, separated
  • 2 1/2 cup plain flour
  • 1tablespoons ginger, ground
  • 1teaspoons cinnamon
  • 1teaspoons baking soda
  • 1 cup icing sugar (for icing)

Description

These are simple to make, taste great and are easy to decorate. I used a gingerbread man cookie cutter turned upside down :)

Method

Step 1 of 7

Preheat oven 180°C. Lightly grease 2 baking trays with butter.

Step 2 of 7

Cream butter and brown sugar together, then mix in golden syrup and yolk of egg.

Step 3 of 7

Sift together flour and spices and then mix into butter mixture until you have a soft dough.

Step 4 of 7

Place dough between 2 sheets of baking paper and roll out until about 4mm thick. Use your cookie cutter to cut out shapes. Place on trays about 3cm apart.

Step 5 of 7

Bake for 10 mins or until brown. Remove and transfer to cool on rack.

Step 6 of 7

Make icing: Place egg white in a clean bowl and use an electric mixer to beat until soft peaks form. Gradually add 1 cup icing sugar and beat until stiff peaks form.

Step 7 of 7

Place prepared icing in piping bag. Pipe icing on biscuits and decorate.
