  • 125grams butter, diced and softened
  • 2tablespoons butter, melted
  • 1teaspoons cinnamon
  • 3teaspoons ground ginger
  • 1teaspoons bi-carbonate of soda
  • 1/4 cup golden syrup
  • 1/2 cup almond meal
  • 1 egg
  • 1/2 cup brown sugar
  • 1/4 cup glace cherries (for decorating)

Method

Step 1 of 6

Place butter, sugar and golden syrup in the bowl of an electric mixer. Beat until creamy. Add egg and mix until well combined.

Step 2 of 6

Gently fold in the flour, almond meal, bicarbonate of soda and spices until a dough has formed. Fold in currants. Shape into a flattened ball and refrigerate for at least 30 minutes.

Step 3 of 6

Preheat oven to 180°C (160°C fan-forced). Roll the dough out onto a floured surface to 5mm thickness. Using various sized star shaped cutters, cut shapes and transfer to lined oven trays. Re-roll the dough offcuts until all has been used.

Bake for 12-14 minutes, until golden. Allow to cool on trays for 5 minutes before removing to a cooling rack to cool completely.

For the icing, place icing sugar in a large bowl and add butter and milk. Whisk well until mixture is smooth.

Step 6 of 6

To assemble tree, arrange base star on a platter and top with a dollop of icing. Press on the next star. Continue building with icing in-between layers. Ice the final star and decorate with the cherries. Ice any remaining stars and use for gift giving or for snacks.
