- 1/3 cup icing sugar
- 250grams unsalted butter, at room temperature
- 2tablespoons glace cherries, finely chopped
- 2tablespoons rice flour
- 2tablespoons cashews, chopped

Try our delicious Christmas shortbread! It's the perfect holiday season treat. Enjoy the classic buttery flavour and texture of our delicious shortbread!
Method
Step 1 of 10
Preheat the oven to 150°C.
Step 2 of 10
Cut butter into small cubes.
Step 3 of 10
Into the large bowl of a food processor add the flour, rice flour and icing sugar.
Step 4 of 10
Add the butter pieces and chop until mixed to crumbs.
Step 5 of 10
Add the nuts and fruit and mix in. Do not overwork.
Step 6 of 10
Tip out and knead very gently into a soft, slightly dry dough.
Step 7 of 10
Roll out on a lightly floured board and cut into desired shapes.
Step 8 of 10
Line baking trays with baking paper and arrange the shortbreads, leaving some room between pieces.
Step 9 of 10
Bake for 30-40 minutes until dry on the surface and slightly firm.
Step 10 of 10
Leave to cool. Store in an airtight container.
