  • 2/3 cup caster sugar
  • 1teaspoons vanilla extract

Method

Step 1 of 3

Beat butter, sugar and vanilla together in a bowl until very pale and creamy. Add flour and stir until a soft dough forms. Turn onto a lightly floured surface and gently knead until smooth.

Halve dough and shape each portion into a disc. Wrap in plastic. Chill for 20 minutes or until firm.

Step 3 of 3

Preheat oven to 160°C. Line 2 baking trays with baking paper. Roll 1 portion of dough between 2 sheets of baking paper until 4mm thick. Using a tree-shaped biscuit cutter, cut biscuits from dough. Transfer to trays. Bake for 15-20 minutes or until light golden. Transfer to a wire rack to cool. Dust with icing sugar to serve.
