  • 2 cup plain flour
  • 250grams unsalted butter, softened
  • 1teaspoons vanilla extract
  • 1/3 cup rice flour
  • 1/3 cup caster sugar
  • 1 cup macadamia nuts, roughly chopped
  • 1/2 cup white choc bits

Method

Step 1 of 3

Preheat oven to 180°C. Line 17x27cm slice pan with paper.

Step 2 of 3

Beat butter, sugar and vanilla together with electric beaters until pale and creamy. Sift flours together and stir into butter mixture until well combined. Stir in nuts and chocolate bits. Press evenly into a pan. Mark into bars using a sharp knife.

Step 3 of 3

Bake for 25 minutes or until golden and cooked through. Cool in the tin. Cut into marked pieces. Note: Vanilla extract is different to vanilla essence.
