  • 2 free range egg whites
  • 1/2 cup caster sugar
  • 2tablespoons jellied cranberry sauce
  • 5-8 drops pink food colouring
  • 2tablespoons Woolworths thickened cream
  • 90grams white chocolate, finely chopped

Description

Add a personal touch to gift-giving this Christmas with these delicate cranberry meringue kisses. Pop them in a jar and decorate to make it extra special.

Method

Step 1 of 5

Preheat oven to 120°C/100°C fan-forced. Line 2 large baking trays with baking paper.

Using an electric mixer, beat egg whites, sugar, half of the sauce and a few drops of food colouring for 10 minutes or until sugar has dissolved and mixture is glossy.

Spoon mixture into a piping bag fitted with a 2cm fluted nozzle, and pipe 3cm-wide rosettes, 2cm apart, onto trays. Bake for 1 hour 15 minutes or until just firm to touch. Remove trays from oven and allow meringues to cool on trays.

Meanwhile, place cream, chocolate, remaining sauce and a few drops of food colouring in a small heatproof bowl. Place bowl over a saucepan of simmering water (ensuring base of bowl does not touch water). Stir cream mixture with a metal spoon for 5 minutes or until mixture is smooth. Refrigerate for 30 minutes or until mixture is spreadable.
