- 5milliliter olive oil cooking spray
- 2/3 cup caster sugar
- 1 cinnamon stick
- 2 whole cloves
- 1 orange, 2 rind cut into 4cm-long strips
- 1 vanilla bean, halved lengthways
- 1 1/2 cups dry red wine
- 1/4 cup glucose syrup
- 1/3 cup powdered gelatine
- 1 1/2 cups white sugar
Description
Enjoy the flavours of mulled wine with these sugar-coated jellies. Why not pop them in a festive box and give them to loved ones as the perfect edible gift?
Instruction tip
Tip:Place jellies in a single layer in a baking paper-lined airtight container for up to one week. Re-roll in sugar just before gifting or serving.
Method
Step 1 of 4
Spray a 20cm (5cm deep) square cake pan with oil.
Step 2 of 4
Combine caster sugar, cinnamon, cloves, rind, vanilla and 1 cup water in a medium saucepan over high heat and bring to the boil. Reduce heat to low and simmer, uncovered, for 5 minutes or until sugar has dissolved and mixture is fragrant.
Step 3 of 4
Add wine and glucose, then bring to the boil over high heat. Remove pan from heat. Sprinkle over gelatine and whisk until dissolved. Strain mixture into cake pan. Stand for 6 hours or until set (do not refrigerate).
Step 4 of 4
Place white sugar on a baking tray. Cut jelly into 4cm squares, then roll in sugar to coat completely. Serve.
