For the garnish
  • 80grams mixed chocolate pieces, broken, shards or pieces
For the sponge
  • 400grams flour
  • 1teaspoons vanilla extract
  • 250grams sugar
  • 2teaspoons baking powder
  • 2teaspoons bicarbonate soda
  • 4 medium eggs, free range
  • 3/4 cup milk
  • 3/4 cup vegetable oil
  • 3/4 cup whipped cream
  • 200grams strawberry jam
  • 300grams icing

Description

This soft sponge cake comes with a creamy and sweet center.

Method

Step 1 of 7

Pre-heat the oven to 180°C/160°C fan-forced. In a bowl, combine the flour with the baking powder and baking soda and set to one side.

Step 2 of 7

In a seperate bowl, crack and beat the eggs and then combine with the vanilla, oil, milk and sugar and mix for 3 minutes.

Step 3 of 7

Now fold your dry ingredients into your wet ingredients until mixed fully.

Step 4 of 7

Transfer the mixture to a deep buttered cake tin and bake for 30 minutes or until cooked through.

Step 5 of 7

Remove from the heat and allow to cool fully. Then slice the cake in half and set to one side.

Step 6 of 7

Layer the center of the cake with the cream and jam and place the other half of the sponge on top.

Step 7 of 7

Prepare the icing as per pack instructions and cover the cake, garnishing with the chocolate pieces.
