Coconut & Lemongrass Stewed Nectarines

- 1 2/3 cup coconut milk
- 100grams caster sugar
- 1 stalk lemongrass, split in half lenghtways
- 4 medium nectarines, peeled and segmented
- 1/3 cup vegan whipping cream
- 1tablespoons icing sugar
Description
A very aromatic and sweet vegan dessert.
Method
Step 1 of 6
In a large sauce pan on a medium heat, coconut milk, lemongrass stalk, sugar and nectarines.
Step 2 of 6
Cook until the sugar has melted, then lower the heat and allow to simmer for 15 minutes until the sauce starts to reduce, stirring occasionally.
Step 3 of 6
After 15 minutes you can remove the nectarines from the pan and place into your serving dish.
Step 4 of 6
Allow the sauce in the pan to keep cooking to reduce further.
Step 5 of 6
While the sauce is reducing, whip the cream with the icing until fluffy.
Step 6 of 6
Add the cream to the top of the stew nectarines and then drizzle some of the reduced sauce over the top before serving removing the lemongrass stalk.
