Description
Learn how to make choc-coated honeycomb from scratch with only five ingredients. This impressive and easy dessert is the perfect treat or homemade gift.
Method
Step 1 of 5
Grease a 23 x 33cm (4.5cm deep) cake pan. Line base and sides with baking paper, extending paper 2cm above edges.
Step 2 of 5
Place sugar, syrup, honey and 1/2 cup water in a large saucepan over medium-low heat and cook, stirring, for 5 minutes or until sugar has dissolved. Increase heat to high and bring mixture to the boil to reach 150°C crack stage on a candy thermometer (about 6 minutes).

Once sugar mixture reaches a deep golden colour, quickly add bicarbonate of soda, stirring with a wooden spoon to combine. Immediately pour mixture into pan and tilt pan (do not use utensils to spread mixture) so mixture spreads evenly across the surface. Set aside until completely cool.
Step 4 of 5
Place chocolate in a small bowl. Transfer honeycomb to a chopping board. Using the back of a large knife, break honeycomb into large pieces. Dip pieces, one at a time, into chocolate to half coat. Place on a tray lined with baking paper. Set aside for 10 minutes or until set.

Store in an airtight container lined with baking paper and keep in a cool place for up to 5 days.
