- 1 cup plain flour
- 2tablespoons icing sugar
- 100grams unsalted butter
- 200grams dark chocolate
- 4 Rocky Road Mallows
- 3 free range eggs
- 3/4 cup caster sugar

Method
Step 1 of 4
Preheat oven to 170°C. Place four ramekins onto a baking tray.
Step 2 of 4
Place chocolate and butter in a medium bowl and microwave in 30 second intervals, stirring in between, until chocolate is completed melted.
Step 3 of 4
Whisk sugar, followed by eggs and flour into melted chocolate. Divide mixture among ramekins, reserving about 4 tbs of mixture.
Step 4 of 4
Push one-upside-down Rocky Road Mallow into each ramekin, pushing in until it is level with the pudding mix. Top with reserved pudding mix to cover any exposed rocky road biscuit. Bake for 15 minutes, dust with icing sugar and serve warm.
