- 1 cup full cream milk
- unsalted butter
- 1teaspoons vanilla extract
- 1packets Rocky Road Mallows
- 3 free range eggs
- 1 loaf brioche, cut into 8 slices
Method
Step 1 of 3
In a medium bowl, whisk together eggs, milk and vanilla. Pour mix into a tray with a lip.

Lightly grease a medium frying pan with butter and place over low-medium heat. Briefly place a slice of brioche into egg mix on tray on one side only. Place egg-mix-side down in frying pan and top with four rocky road mallow halves. Dip a second piece of brioche into egg mix and place egg-mix-side up on top to make a sandwich, then compress sandwich by pushing down gently with a spatula. Cook for 2 minutes or until bottom side is golden, flip and cook for a further 1-2 minutes until remaining side is golden and chocolate is melted.
Step 3 of 3
Remove from pan, slice in half and serve. Repeat with remaining ingredients.
